Key Lime Bars

Key Lime Bars are a tangy and creamy dessert with a buttery graham cracker crust and a smooth key lime filling. These refreshing bars are perfect for warm weather and easy to make ahead.

  • 1 and 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 2 cans (14 oz each) sweetened condensed milk
  • 1/2 cup sour cream
  • 3/4 cup key lime juice (fresh or bottled)
  • 1 tbsp key lime zest
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or foil and lightly grease.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until evenly combined.
  3. Press the crust mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, whisk together sweetened condensed milk, sour cream, key lime juice, and zest until smooth.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for 15–18 minutes, or until the filling is just set and only slightly jiggles in the center.
  7. Cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
  8. Cut into bars and dust with powdered sugar before serving, if desired.

Notes

  • For extra tartness, add a bit more lime zest.
  • Bars can be made up to 2 days in advance and stored in the fridge.
  • Use bottled key lime juice if fresh key limes are unavailable.
