- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 3 oz box strawberry gelatin mix
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Pink or red sanding sugar (for rolling)
- 24 Hershey’s Kisses, unwrapped
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter and granulated sugar until fluffy.
- Beat in the egg, vanilla extract, and strawberry gelatin mix until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture to form a soft dough.
- Roll dough into 1-inch balls, then coat each ball in sanding sugar.
- Place on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8–10 minutes, until the cookies are set but still soft.
- Immediately press a Hershey’s Kiss into the center of each warm cookie.
- Allow cookies to cool completely so the chocolate can firm up.
Notes
- Chill the dough for 15 minutes if too soft to roll.
- Use heart-shaped Hershey’s Kisses for Valentine’s Day flair.
- Allow cookies to cool fully before storing to avoid melting the Kisses.
