- For the Crumble:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 1 cup brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsalted butter, melted
- For the Lemon Cream Filling:
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tsp lemon zest
- 1 large egg yolk
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine flour, oats, brown sugar, baking soda, and salt.
- Pour in the melted butter and mix until the mixture is crumbly and evenly moistened.
- Press two-thirds of the crumble mixture into the bottom of the prepared pan.
- In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth.
- Pour the lemon filling evenly over the crust.
- Sprinkle the remaining crumble mixture on top.
- Bake for 25–30 minutes or until the top is lightly golden.
- Cool completely, then refrigerate for at least 1 hour before slicing.
