Lemon Cream Crumble Bars

Bright and creamy lemon bars layered with a zesty lemon filling between a buttery crumble crust and topping—sweet, tangy, and irresistibly soft.

  • For the Crumble:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats
  • 1 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsalted butter, melted
  • For the Lemon Cream Filling:
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 large egg yolk

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt.
  3. Pour in the melted butter and mix until the mixture is crumbly and evenly moistened.
  4. Press two-thirds of the crumble mixture into the bottom of the prepared pan.
  5. In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth.
  6. Pour the lemon filling evenly over the crust.
  7. Sprinkle the remaining crumble mixture on top.
  8. Bake for 25–30 minutes or until the top is lightly golden.
  9. Cool completely, then refrigerate for at least 1 hour before slicing.

Notes

  • Chill thoroughly for cleaner slices.
  • Add extra lemon zest for a stronger citrus punch.
  • Substitute lime for a tropical twist.
