Ingredients

  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup lemon curd (store-bought or homemade)
  • 1 cup crushed shortbread cookies or graham crackers

Instructions

  1. In a mixing bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. Gently fold the whipped cream into the lemon curd until smooth and fully combined.
  3. Spoon a layer of crushed cookies into the bottom of small parfait cups or jars.
  4. Add a layer of lemon cream mixture over the cookies.
  5. Repeat layers as desired, finishing with a lemon cream layer on top.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Garnish with fresh berries or lemon zest before serving, if desired.
