Loaded Mac & Cheese is a rich, baked pasta dish featuring tender beef chunks, a creamy cheese sauce, and a golden breadcrumb topping, finished with sour cream and a hint of spice for ultimate comfort and flavor.

  • 12 oz elbow macaroni or rigatoni
  • 2 cups cooked beef chunks (steak, roast, or brisket)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or gouda (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs
  • 1 tbsp melted butter (for breadcrumbs)
  • Sour cream for topping
  • Optional: paprika or chili powder for garnish

Instructions

  1. Boil pasta until al dente. Drain and set aside.
  2. In a saucepan, melt butter and stir in flour to make a roux. Cook for 1 minute.
  3. Whisk in milk gradually and cook until thickened.
  4. Add cheeses, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  5. Fold in cooked beef and pasta until evenly coated.
  6. Pour mixture into a greased baking dish and spread evenly.
  7. Combine breadcrumbs with melted butter and sprinkle on top.
  8. Bake at 375°F (190°C) for 20–25 minutes until golden and bubbly.
  9. Let rest for 5 minutes. Serve with sour cream and a dash of paprika or chili powder.

Notes

  • Use sharp cheddar for bold flavor and mozzarella for extra creaminess.
  • Breadcrumb topping adds crunch but is optional.
  • Customize with different meats or vegetables.
  • Can be made in advance and baked later.
  • Use gluten-free pasta and flour for a gluten-free version.
