- 3 cups cooked chicken breast, shredded or diced
- 6 cups mixed salad greens or shredded romaine
- 1 cup mandarin orange segments (drained if canned)
- 1 cup shredded carrots
- 1 cup crispy chow mein noodles
- 1/2 cup sliced almonds, toasted
- 3 green onions, sliced
- 1/4 cup rice vinegar
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp toasted sesame oil
- 1/4 cup vegetable oil
- 1 tsp grated fresh ginger
- 1 garlic clove, minced
- In a large salad bowl, combine the salad greens, chicken, mandarin oranges, carrots, green onions, almonds, and chow mein noodles.
- In a separate bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, vegetable oil, ginger, and garlic until fully blended.
- Pour the dressing over the salad just before serving.
