Mediterranean Pasta Salad

Mediterranean Pasta Salad is a vibrant, hearty dish packed with fresh vegetables, olives, feta cheese, and a tangy vinaigrette. Perfect for picnics, potlucks, or an easy make-ahead lunch.

Ingredients

  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/3 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper to make the dressing.
  3. In a large bowl, combine cooked pasta, tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
  4. Pour the dressing over the salad and toss to coat evenly.
  5. Gently fold in the feta cheese.
  6. Chill for at least 30 minutes before serving to let flavors meld.

Notes

  • Use gluten-free pasta if needed.
  • Add grilled chicken or chickpeas for extra protein.
  • Best served chilled but can be eaten at room temperature.
  • Store in an airtight container in the fridge for up to 4 days.
