- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar (for crust)
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1/4 teaspoon salt
- Optional toppings: fresh berries, fruit preserves, chocolate ganache, or whipped cream
- Preheat the oven to 325°F (163°C). Line a mini muffin tin with paper liners or grease lightly.
- In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar until combined.
- Press about 1 teaspoon of the crust mixture into the bottom of each mini muffin cup. Bake for 5 minutes, then remove from oven and let cool slightly.
- In a large bowl, beat cream cheese until smooth. Add sugar, vanilla, eggs, sour cream, and salt. Beat until well combined and creamy.
- Spoon the cheesecake filling evenly over the cooled crusts.
- Bake for 15–18 minutes, or until centers are just set. Let cool completely in the pan, then chill in the refrigerator for at least 2 hours.
- Top with desired garnishes before serving.
