Mini Cheesecake Bites are creamy, bite-sized treats with a graham cracker crust and rich cheesecake filling, perfect for parties, dessert trays, or satisfying a quick sweet craving.

  • 1 cup graham cracker crumbs
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 teaspoon salt
  • Optional toppings: fresh berries, fruit preserves, chocolate ganache, or whipped cream

Instructions

  1. Preheat the oven to 325°F (163°C). Line a mini muffin tin with paper liners or grease lightly.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar until combined.
  3. Press about 1 teaspoon of the crust mixture into the bottom of each mini muffin cup. Bake for 5 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add sugar, vanilla, eggs, sour cream, and salt. Beat until well combined and creamy.
  5. Spoon the cheesecake filling evenly over the cooled crusts.
  6. Bake for 15–18 minutes, or until centers are just set. Let cool completely in the pan, then chill in the refrigerator for at least 2 hours.
  7. Top with desired garnishes before serving.
