Moist Ginger Cake Squares are rich, spiced treats made with molasses and warm ginger flavor. Perfect for holidays or chilly days, these squares are soft, dense, and full of comforting spice.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1/2 cup hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the egg and beat until incorporated. Mix in the molasses.
  5. Gradually add the dry ingredients, alternating with the hot water, beginning and ending with dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan, then cut into squares to serve.

Notes

  • For extra richness, serve with whipped cream or vanilla ice cream.
  • The cake can be stored in an airtight container for up to 4 days.
  • Adding a pinch of nutmeg enhances the warm spice flavor.
