A tender, moist loaf cake topped with a simple sweet glaze that soaks into the crumb for extra softness and flavor.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Glaze: 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture alternately with the milk, mixing just until combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
  8. While the cake cools slightly, whisk together the powdered sugar, milk, and vanilla to make the glaze.
  9. Drizzle the glaze over the warm cake, allowing it to soak in.
  10. Let the cake cool completely before slicing.

Notes

  • For extra flavor, replace milk in the glaze with lemon juice.
  • Ensure the cake is still warm when glazing for maximum absorption.
  • You can add citrus zest or spices to customize flavor.
