Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1214 chocolate truffles or chocolate chunks (for center)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg, vanilla extract, and red food coloring. Mix until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Take about 2 tablespoons of dough, flatten slightly, place a chocolate truffle or chunk in the center, and wrap the dough around to seal.
  7. Place cookies on the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 10–12 minutes, until the edges are set but centers are soft.
  9. Cool for 5 minutes on the sheet, then transfer to a wire rack. Dust with powdered sugar if desired and serve warm for a molten center.

Notes

  • Use high-quality chocolate truffles or chunks for the best molten center.
  • Do not overbake to keep the centers gooey.
  • Cookies can be rewarmed in the microwave for 10–15 seconds to re-melt the center.
