- 1/2 cup unsalted butter
- 1 3/4 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 tsp vanilla extract
- 3 cups quick oats
- Pinch of salt (optional)
- Line a baking sheet with parchment paper.
- In a saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
- Bring the mixture to a boil and let it boil for 1 minute without stirring.
- Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
- Add oats and mix until fully coated.
- Scoop spoonfuls of the mixture onto the parchment-lined sheet.
- Allow cookies to cool and set for 20–30 minutes before serving.
Notes
- Use quick oats for the best texture; old-fashioned oats will make chewier cookies.
- Add shredded coconut or chopped nuts for extra flavor.
- If cookies don’t set, the mixture may not have boiled long enough—refrigerate to firm them up.
