No‑Bake Chocolate Oatmeal Cookies

No-Bake Chocolate Oatmeal Cookies are rich, fudgy, and chewy treats made with cocoa, oats, and peanut butter — perfect for a quick and easy dessert without needing an oven.

Ingredients

Scale
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • Pinch of salt

Instructions

  1. Line two baking sheets with parchment or wax paper.
  2. In a medium saucepan, combine sugar, cocoa powder, milk, and butter over medium heat.
  3. Bring the mixture to a rolling boil and cook for 1 minute, stirring constantly.
  4. Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
  5. Add oats and mix well until fully combined.
  6. Drop spoonfuls of the mixture onto the prepared sheets.
  7. Let cool at room temperature for 30–60 minutes until firm and set.
  8. Store in an airtight container at room temperature for up to 1 week.

Notes

  • Use quick oats for the best texture; old-fashioned oats may result in crumbly cookies.
  • Chill in the refrigerator for faster setting.
  • Add shredded coconut or chopped nuts for extra texture and flavor.
  • To make dairy-free, use plant-based butter and non-dairy milk.
