  • 1 1/2 cups crushed chocolate graham crackers or Oreo crumbs
  • 6 tbsp unsalted butter, melted
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 oz unsweetened chocolate, melted and cooled
  • 1 tsp vanilla extract
  • 2 large pasteurized eggs
  • For the topping:
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Chocolate shavings or curls (optional)

Instructions

  1. In a bowl, mix cookie crumbs with melted butter until well combined. Press evenly into an 8×8-inch pan. Chill in the fridge while making the filling.
  2. In a large bowl, beat softened butter and sugar until light and fluffy, about 2–3 minutes.
  3. Add melted chocolate and vanilla, mixing until smooth.
  4. Add pasteurized eggs one at a time, beating on high speed for 3–5 minutes after each egg until light and silky.
  5. Spread the chocolate filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours or overnight to set.
  6. Whip heavy cream with powdered sugar until stiff peaks form. Spread over the chilled chocolate layer.
  7. Top with chocolate shavings if desired. Slice into squares and serve chilled.
