No-Bake Peanut Butter Oat Cookies

  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup creamy peanut butter
  • 3 cups quick oats
  • 1/4 tsp salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt the butter. Add granulated sugar, brown sugar, and milk.
  3. Bring the mixture to a rolling boil and cook for 1 minute.
  4. Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
  5. Add oats and mix until fully combined.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Let cookies cool at room temperature for 20–30 minutes or until set.

Notes

  • Use quick oats for the best texture—old-fashioned oats make the cookies chewier.
  • Add chocolate chips or shredded coconut for variations.
