- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 3 cups quick oats
- 1/4 tsp salt
- Line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt the butter. Add granulated sugar, brown sugar, and milk.
- Bring the mixture to a rolling boil and cook for 1 minute.
- Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
- Add oats and mix until fully combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let cookies cool at room temperature for 20–30 minutes or until set.
Notes
- Use quick oats for the best texture—old-fashioned oats make the cookies chewier.
- Add chocolate chips or shredded coconut for variations.
- If cookies don’t set, boil mixture a few seconds longer next time.
