Instructions
- In a bowl, whisk together orange juice, Dijon mustard, olive oil, minced garlic, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Preheat a skillet or grill pan over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.
- Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add grated cauliflower and cook for 5-7 minutes, stirring frequently, until tender.
- Stir in chopped parsley, cilantro, salt, and pepper. Cook for an additional 1-2 minutes.
- Serve chicken breasts over herbed cauliflower rice and drizzle with any remaining pan juices.
