Orange Mustard Chicken with Herbed Cauliflower Rice

  • 4 boneless, skinless chicken breasts
  • 1/2 cup orange juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head cauliflower, grated into rice-sized pieces
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon olive oil (for cauliflower rice)
  • 1 clove garlic, minced (for cauliflower rice)
  • Salt and pepper to taste (for cauliflower rice)

Instructions

  1. In a bowl, whisk together orange juice, Dijon mustard, olive oil, minced garlic, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  3. Preheat a skillet or grill pan over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side or until fully cooked and golden brown.
  4. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
  5. Add grated cauliflower and cook for 5-7 minutes, stirring frequently, until tender.
  6. Stir in chopped parsley, cilantro, salt, and pepper. Cook for an additional 1-2 minutes.
  7. Serve chicken breasts over herbed cauliflower rice and drizzle with any remaining pan juices.

  • Chicken can be grilled or baked for variation.
  • Cauliflower rice can be prepared in advance and stored in the fridge.
  • For extra flavor, add a splash of lemon juice to the cauliflower rice.
