- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup balsamic vinegar
- 1 tbsp Dijon mustard
- 2 tbsp honey
- 2 large peaches, sliced
- 1/4 tsp red pepper flakes (optional)
- Fresh thyme or basil for garnish (optional)
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken and sear until golden brown and cooked through, about 5–6 minutes per side. Remove and set aside.
- In the same skillet, reduce heat to medium and add garlic. Cook for 1 minute until fragrant.
- Stir in chicken broth, balsamic vinegar, Dijon mustard, honey, and red pepper flakes (if using). Simmer for 2–3 minutes to combine.
- Add peach slices and cook for another 2–3 minutes until slightly softened.
- Return chicken to the skillet and spoon sauce and peaches over the top. Simmer for another 2–3 minutes to heat through.
- Garnish with fresh thyme or basil and serve warm.
Notes
- Use fresh, ripe peaches for the best flavor, or substitute with drained canned peaches in a pinch.
- Pairs well with rice, quinoa, or a side salad.
- For extra flavor, marinate chicken in a bit of balsamic and honey before cooking.
