  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet or dark chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop dough into balls and place on baking sheets. Flatten slightly with a fork to create a crisscross pattern.
  7. Bake for 10-12 minutes until lightly golden at the edges. Cool on wire racks.
  8. While cookies cool, heat heavy cream in a small saucepan until just simmering. Pour over chocolate chips in a bowl and let sit for 1 minute. Stir until smooth.
  9. Spoon ganache over each cooled cookie and swirl gently with a toothpick or skewer. Let ganache set before serving.
