Peanut Butter Scotcharoo Bars

Peanut Butter Scotcharoo Bars are no-bake cereal treats made with crispy rice cereal coated in a sweet peanut butter mixture and topped with a rich layer of melted chocolate and butterscotch chips.

  • 6 cups crispy rice cereal
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a large saucepan over medium heat, combine corn syrup and sugar. Stir until sugar dissolves and mixture begins to boil. Remove from heat.
  3. Stir in peanut butter and vanilla (if using) until smooth.
  4. Quickly fold in crispy rice cereal until evenly coated.
  5. Press mixture into prepared pan using a spatula or greased hands.
  6. In a microwave-safe bowl, melt chocolate chips and butterscotch chips in 30-second intervals, stirring between each until smooth.
  7. Spread melted chocolate mixture evenly over the cereal layer.
  8. Let bars cool at room temperature until set, or refrigerate to speed up setting.
  9. Cut into squares and serve.

Notes

  • Do not boil the sugar mixture too long or bars will become hard.
  • Line pan with parchment for easier removal and cleaner cuts.
  • Top with flaky sea salt or chopped peanuts for added flavor and texture.
  • Bars keep best at room temperature in an airtight container for up to 5 days.
