- 2 cans (15 oz each) navy beans, drained and rinsed
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp molasses
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 tsp cayenne pepper (optional)
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers, and sauté until softened, about 5 minutes.
- Add minced garlic and cook for another 1 minute.
- In a large bowl, combine ketchup, brown sugar, molasses, mustard, vinegar, smoked paprika, black pepper, salt, and cayenne (if using). Stir well.
- Add sautéed vegetables and drained beans to the sauce and mix to combine.
- Transfer the mixture to a baking dish and cover with foil.
- Bake for 45 minutes, then uncover and bake for an additional 15 minutes to thicken.
Notes
- For a smoky flavor, add chopped cooked bacon or a dash of liquid smoke.
- Use different colored peppers for a more vibrant look.
- These beans taste even better the next day.
