Pepper Baked Beans

Pepper Baked Beans are a flavorful and hearty twist on classic baked beans, enhanced with bell peppers, spices, and a touch of sweetness for a perfect side dish at any BBQ or gathering.

  • 2 cans (15 oz each) navy beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp molasses
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and bell peppers, and sauté until softened, about 5 minutes.
  3. Add minced garlic and cook for another 1 minute.
  4. In a large bowl, combine ketchup, brown sugar, molasses, mustard, vinegar, smoked paprika, black pepper, salt, and cayenne (if using). Stir well.
  5. Add sautéed vegetables and drained beans to the sauce and mix to combine.
  6. Transfer the mixture to a baking dish and cover with foil.
  7. Bake for 45 minutes, then uncover and bake for an additional 15 minutes to thicken.

Notes

  • For a smoky flavor, add chopped cooked bacon or a dash of liquid smoke.
  • Use different colored peppers for a more vibrant look.
  • These beans taste even better the next day.
