Pepper Baked Beans

Pepper Baked Beans are a savory, slightly sweet baked bean dish enriched with bell peppers and spices, making them a vibrant and flavorful side perfect for barbecues, potlucks, or family dinners.

  • 2 cans (15 oz each) baked beans
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté for 5–7 minutes until softened.
  3. Add minced garlic and cook for an additional 1 minute.
  4. In a large mixing bowl, combine baked beans, brown sugar, ketchup, mustard, Worcestershire sauce, paprika, black pepper, and salt.
  5. Stir in the sautéed vegetables and mix well to combine.
  6. Transfer the mixture to a baking dish and cover with foil.
  7. Bake for 45 minutes, then uncover and bake for an additional 10–15 minutes to slightly thicken.
  8. Remove from oven and let rest for 10 minutes before serving.

Notes

  • Use canned vegetarian baked beans for a meat-free version.
  • For extra flavor, add a splash of apple cider vinegar or hot sauce.
  • Leftovers can be refrigerated for up to 4 days and reheated easily.
