- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted and slightly cooled
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 large egg + 1 egg yolk
- 1 cup semisweet chocolate chunks
- 1/2 cup crushed peppermint candies or candy canes
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, mix melted butter, brown sugar, and granulated sugar until well combined.
- Add vanilla extract, peppermint extract, egg, and egg yolk. Mix until smooth.
- Gradually stir in the dry ingredients until just combined.
- Fold in chocolate chunks and crushed peppermint candies.
- Scoop dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are lightly golden and centers look just set.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overbake to keep cookies soft and chewy.
- Chill dough for 30 minutes for thicker cookies if desired.
