Pineapple-Glazed Meatballs

Tender homemade meatballs coated in a sweet and tangy pineapple glaze, perfect as an appetizer or served over rice.

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup onion, finely minced
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup milk
  • 1 tbsp soy sauce
  • 1 tbsp olive oil (for browning)
  • 1 cup pineapple juice
  • 1/3 cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp soy sauce (for glaze)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup pineapple chunks (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, milk, soy sauce, salt, and pepper until combined.
  3. Roll into 1-inch meatballs and place on the baking sheet.
  4. Bake for 15–18 minutes or until cooked through.
  5. Meanwhile, prepare the glaze: In a saucepan, whisk together pineapple juice, brown sugar, ketchup, and soy sauce. Bring to a simmer.
  6. Add the cornstarch slurry and cook for 1–2 minutes until thickened.
  7. Stir in pineapple chunks if using.
  8. Add cooked meatballs to the glaze, tossing to coat evenly.
  9. Serve warm as an appetizer or over rice.

Notes

  • Use ground turkey for a lighter option.
  • Adjust sweetness by adding more or less brown sugar.
  • Great for party appetizers—keep warm in a slow cooker.
