- 1 can (14 oz) sweetened condensed milk
- 3 cups white chocolate chips or finely chopped white chocolate
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup dried fruit (cranberries, apricots, or figs), chopped
- Pinch of salt (optional)
- Line an 8×8 inch pan with parchment paper, leaving overhang for easy removal.
- In a saucepan over low heat, combine condensed milk, white chocolate, and butter. Stir until melted and smooth. Remove from heat.
- Stir in vanilla and salt if using.
- Fold in pistachios and dried fruit until evenly distributed.
- Pour mixture into prepared pan, smooth the top. Refrigerate 3-4 hours until firm.
- Lift fudge out of pan using parchment. Cut into squares with a sharp knife.
