Pork Stir-Fry with Green Beans and Peppers

A quick and savory pork stir-fry loaded with green beans and bell peppers, tossed in a flavorful garlic-soy sauce. Perfect for weeknight dinners served over rice or noodles.

  • 1 lb pork tenderloin or shoulder, thinly sliced
  • 2 cups green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp water
  • Salt and pepper to taste
  • Optional: sesame seeds and sliced green onions for garnish

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce, sesame oil, cornstarch, and water to make the sauce. Set aside.
  2. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add sliced pork and stir-fry until browned and cooked through, about 4–5 minutes. Remove and set aside.
  3. Add remaining oil to the skillet. Sauté garlic and ginger for 30 seconds until fragrant.
  4. Add green beans and stir-fry for 2–3 minutes.
  5. Add bell peppers and cook for another 2–3 minutes until vegetables are tender-crisp.
  6. Return the pork to the skillet. Pour in the sauce and toss everything to coat evenly. Cook for 1–2 minutes until the sauce thickens slightly.
  7. Season with salt and pepper to taste.
  8. Serve hot over steamed rice or noodles, garnished with sesame seeds and green onions if desired.

Notes

  • Slice pork thinly against the grain for tender results.
  • Blanch green beans briefly before stir-frying for extra tenderness.
  • You can substitute pork with chicken, beef, or tofu.
  • Add chili flakes or sriracha for a spicy version.
