  • 2 lbs pork shoulder or chicken breast/thighs
  • 1 cup barbecue sauce (store-bought or homemade)
  • 1/2 cup chicken broth or water
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 46 sandwich buns
  • Optional: coleslaw for topping

Instructions

  1. Season the pork or chicken with salt, pepper, smoked paprika, garlic powder, and onion powder.
  2. Place meat in a slow cooker with chicken broth, brown sugar, and apple cider vinegar.
  3. Cook on low for 6–8 hours or high for 3–4 hours until the meat is tender and easily shredded.
  4. Remove meat and shred with two forks. Discard excess liquid from the slow cooker.
  5. Return shredded meat to the slow cooker and mix with barbecue sauce. Cook on low for an additional 15–20 minutes.
  6. Toast sandwich buns if desired. Pile the pulled barbecue meat onto each bun.
  7. Top with coleslaw if using, and serve warm.

Notes

  • For a spicier version, add hot sauce or cayenne pepper to the barbecue sauce.
  • This recipe works well with pork, chicken, or jackfruit for a vegetarian option.
  • Leftovers can be stored in the fridge for up to 4 days or frozen for up to 2 months.
