- 2 lbs pork shoulder or chicken thighs
- 1 cup barbecue sauce
- 1/2 cup chicken broth or water
- 1 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- For the coleslaw:
- 3 cups shredded cabbage (green or mixed)
- 1 cup shredded carrots
- 1/2 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- Salt and pepper to taste
- Season the pork or chicken with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Place meat in a slow cooker with broth, brown sugar, and apple cider vinegar. Cook on low for 6–8 hours or high for 3–4 hours until tender.
- Shred the meat with two forks and discard excess liquid. Return to the cooker and stir in barbecue sauce. Warm through.
- To make coleslaw, combine cabbage, carrots, mayo, vinegar, sugar, salt, and pepper in a large bowl. Mix well and refrigerate until ready to serve.
- Plate the pulled BBQ meat with a side of coleslaw. Serve with bread, cornbread, or roasted potatoes if desired.

- Use pre-shredded coleslaw mix for faster prep.
- Make it a sandwich by piling meat and slaw on a bun.
- Coleslaw can be made a day ahead to deepen flavors.
