Pumpkin

A simple, versatile recipe for soft cooked pumpkin that can be used as a side dish or as a base for pies, soups, or baking.

Ingredients

  • 4 cups pumpkin, peeled and cubed
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon (optional)
  • 1 tbsp brown sugar (optional)

Instructions

  1. Cut the pumpkin into evenly sized cubes and remove the seeds and skin.
  2. Place the pumpkin cubes into a pot and cover with water.
  3. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until tender.
  4. Drain the pumpkin and return it to the pot.
  5. Add butter, salt, pepper, and optional spices or sugar.
  6. Mash until smooth or leave chunky as desired.
  7. Serve warm as a side dish or use in recipes calling for cooked pumpkin.

Notes

  • Roasting the pumpkin instead of boiling adds deeper flavor.
  • Use sugar pie pumpkins for best texture and sweetness.
  • Add nutmeg or ginger for a more dessert-like flavor.
