- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups old-fashioned oats
- 3/4 cup raspberry jam (or 1 1/2 cups fresh raspberries with 2 tablespoons sugar)
- Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix together the melted butter, sugar, and vanilla extract.
- Stir in the flour, baking powder, and salt until combined, then mix in the oats.
- Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust.
- Spread the raspberry jam evenly over the crust (or sprinkle sugared raspberries if using fresh).
- Sprinkle the remaining oat mixture over the top to create the crumble.
- Bake for 30–35 minutes or until golden brown on top.
- Cool completely in the pan before slicing into bars.
