Raspberry Crumble Bars

Raspberry Crumble Bars are a sweet and buttery dessert made with a crumbly oat crust and topping, layered with raspberry jam or fresh raspberries for a delicious, fruity bite-sized treat.

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned oats
  • 3/4 cup raspberry jam (or 1 1/2 cups fresh raspberries with 2 tablespoons sugar)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix together the melted butter, sugar, and vanilla extract.
  3. Stir in the flour, baking powder, and salt until combined, then mix in the oats.
  4. Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust.
  5. Spread the raspberry jam evenly over the crust (or sprinkle sugared raspberries if using fresh).
  6. Sprinkle the remaining oat mixture over the top to create the crumble.
  7. Bake for 30–35 minutes or until golden brown on top.
  8. Cool completely in the pan before slicing into bars.

Notes

  • Substitute other fruit jams like strawberry or apricot for variety.
  • Bars store well in an airtight container for up to 5 days.
  • For a crispier texture, chill before slicing.
