- 1.5 pounds baby potatoes, halved
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1 pint cherry tomatoes
- 1/2 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 teaspoon dried oregano
- 1 teaspoon lemon zest (optional)
- Preheat oven to 400°F (200°C).
- Toss halved baby potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes.
- Add cherry tomatoes to the baking sheet, toss gently, and continue roasting for another 15–20 minutes, until potatoes are golden and tomatoes are blistered.
- Remove from oven and transfer to a serving bowl.
- Sprinkle crumbled feta cheese, parsley, basil, and oregano over the warm vegetables. Add lemon zest if using.
- Toss gently to combine and serve warm or at room temperature.
