Roasted Glazed Carrots

Tender roasted carrots coated in a sweet and savory glaze made with honey, butter, and herbs, perfect as an easy side dish.

Ingredients

  • 1 1/2 lbs carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp melted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, honey, melted butter, salt, pepper, and thyme.
  3. Add the carrots and toss to coat evenly.
  4. Spread the carrots in a single layer on the baking sheet.
  5. Roast for 20–25 minutes, stirring halfway through, until tender and lightly caramelized.
  6. Serve warm, spooning extra glaze from the pan over the carrots.

Notes

  • For extra caramelization, broil for the last 2 minutes.
  • Use maple syrup instead of honey for a vegan version (omit butter or use vegan butter).
  • Add a squeeze of lemon juice before serving for brightness.
