  • 6 garlic cloves, peeled

  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried rosemary)
  • Salt and freshly ground black pepper to taste
  • Optional: balsamic vinegar drizzle for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper or lightly grease it.
  2. Place the quartered onions and garlic cloves in a large bowl. Add olive oil, thyme, rosemary, salt, and pepper. Toss to coat evenly.
  3. Spread the mixture in a single layer on the prepared baking sheet.
  4. Roast for 35–40 minutes, turning once halfway through, until onions are golden and tender and garlic is soft.
  5. Optional: Drizzle with a little balsamic vinegar before serving for extra depth of flavor.
  6. Serve warm as a side dish or topping for meats, grains, or salads.
