  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
  • 1 tbsp lemon juice
  • 2 tbsp demerara or turbinado sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in vanilla extract.
  5. Stir in the sour cream or yogurt until well combined.
  6. Toss chopped apples with lemon juice, then fold them into the batter.
  7. Add the dry ingredients to the wet ingredients and mix until just combined.
  8. Pour batter into prepared pan and smooth the top. Sprinkle with demerara sugar for a caramelized crust.
  9. Bake for 40–50 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
