Sausage and Vegetable Fried Rice

- 2 cups cooked and cooled white rice
- 8 oz smoked sausage, sliced
- 1 cup mixed vegetables (carrots, peas, corn, or bell peppers)
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon sesame oil
- 2 green onions, sliced
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add sliced sausage and cook until browned, about 4–5 minutes. Remove from skillet and set aside.
- In the same skillet, add remaining vegetable oil and sauté garlic for 30 seconds until fragrant.
- Add mixed vegetables and cook for 3–4 minutes until tender.
- Push vegetables to the side of the skillet and pour in the beaten eggs, scrambling until cooked through.
- Add cooked rice to the skillet, breaking up clumps, and stir-fry for 2–3 minutes.
- Return the sausage to the skillet, then add soy sauce, black pepper, and sesame oil; stir well to combine.
- Cook for an additional 2 minutes, tossing to heat through.
- Garnish with sliced green onions before serving.
Notes
- Day-old rice works best for fried rice as it prevents mushiness.
- You can substitute smoked sausage with chicken sausage or even leftover ham.
- Adjust soy sauce and seasoning to taste.
