Sausage & Roasted Sweet Potatoes

A simple, hearty dish made with savory sausage and caramelized roasted sweet potatoes, seasoned and baked to perfection for an easy weeknight meal.

Ingredients

  • 1 lb smoked or Italian sausage, sliced into rounds
  • 3 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread potatoes on the baking sheet and roast for 20 minutes.
  4. Remove from oven, add the sliced sausage, and toss lightly.
  5. Return to the oven and roast for another 15–20 minutes, or until potatoes are caramelized and sausage is browned.
  6. Sprinkle with fresh parsley before serving if desired.

Notes

  • Add sliced onions or bell peppers for more flavor and color.
  • Use turkey or chicken sausage for a lighter option.
  • Serve with a drizzle of hot honey or maple syrup for a sweet–savory twist.
