- 1 lb smoked or Italian sausage, sliced into rounds
- 3 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Spread potatoes on the baking sheet and roast for 20 minutes.
- Remove from oven, add the sliced sausage, and toss lightly.
- Return to the oven and roast for another 15–20 minutes, or until potatoes are caramelized and sausage is browned.
- Sprinkle with fresh parsley before serving if desired.
Notes
- Add sliced onions or bell peppers for more flavor and color.
- Use turkey or chicken sausage for a lighter option.
- Serve with a drizzle of hot honey or maple syrup for a sweet–savory twist.
