Sautéed Zucchini & Peppers

A simple, flavorful sautéed vegetable side dish made with zucchini, bell peppers, garlic, and herbs.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced zucchini and bell peppers and sauté for 5–7 minutes until they begin to soften.
  3. Stir in the minced garlic, oregano, and basil.
  4. Continue cooking for another 3–4 minutes until the vegetables are tender-crisp.
  5. Season with salt and black pepper to taste.
  6. Remove from heat and sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Use a mix of colored peppers for a sweeter taste.
  • Do not overcook to maintain crisp texture.
