Sautéed Zucchini & Peppers

- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt, to taste
- Black pepper, to taste
- 1 tbsp fresh parsley, chopped (optional)
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced zucchini and bell peppers and sauté for 5–7 minutes until they begin to soften.
- Stir in the minced garlic, oregano, and basil.
- Continue cooking for another 3–4 minutes until the vegetables are tender-crisp.
- Season with salt and black pepper to taste.
- Remove from heat and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, add a squeeze of lemon juice before serving.
- Use a mix of colored peppers for a sweeter taste.
- Do not overcook to maintain crisp texture.
