- 12 oz fettuccine pasta
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pesto sauce (store-bought or homemade)
- 1/4 cup grated Parmesan cheese
- 1/4 cup pasta cooking water (reserved)
- Fresh basil leaves for garnish (optional)
- Cook fettuccine according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
- Add shrimp, salt, and pepper. Cook 2–3 minutes per side, or until shrimp are pink and opaque. Remove from heat.
- Return cooked pasta to the pot or a large mixing bowl. Stir in pesto sauce and reserved pasta water to coat.
- Add cooked shrimp and toss gently to combine.
- Sprinkle with Parmesan cheese and garnish with basil if desired.
- Serve warm.
Notes
- Use fresh or frozen shrimp—just thaw completely before cooking.
- Homemade pesto adds a fresher flavor but store-bought works well too.
- Add cherry tomatoes or spinach for extra color and nutrients.
