Skillet Chicken with Roasted Tomatoes and Mozzarella

A flavorful and comforting dish made in one skillet, featuring juicy chicken breasts topped with sweet roasted tomatoes and melted mozzarella. Perfect for a quick weeknight dinner with a fresh Italian flair.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 pint cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh basil, chopped (plus more for garnish)
  • 4 oz (115g) fresh mozzarella, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and oregano.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 3–4 minutes per side until golden brown.
  4. Add cherry tomatoes and minced garlic around the chicken in the skillet. Drizzle with balsamic vinegar.
  5. Transfer the skillet to the oven and roast for 12–15 minutes, or until chicken is cooked through (internal temp 165°F/74°C).
  6. Remove from oven, top each chicken breast with sliced mozzarella, and return to oven for 2–3 minutes until cheese is melted.
  7. Sprinkle with fresh basil and serve hot.

Notes

  • Serve with pasta, rice, or crusty bread to soak up the juices.
  • Substitute chicken with turkey cutlets or tofu for variation.
  • Add spinach or zucchini for extra vegetables.
