- 1 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup boiling water
- 1/2 cup caramel sauce
- 1/3 cup chopped peanuts
- 1/2 cup unsalted butter, softened
- 3/4 cup creamy peanut butter
- 2 cups powdered sugar
- 2–3 tbsp milk
- Extra caramel sauce for drizzling
- Additional chopped peanuts for topping
- Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Slowly stir in boiling water until fully incorporated. Batter will be thin.
- Fill liners 2/3 full and bake for 18–20 minutes, or until a toothpick comes out clean.
- Let cupcakes cool completely. Cut a small hole in the center of each cupcake and fill with caramel and chopped peanuts.
- For the frosting, beat butter and peanut butter until creamy. Add powdered sugar gradually, then milk until fluffy.
- Pipe frosting onto cupcakes.
- Drizzle with caramel and sprinkle with additional peanuts before serving.
Notes
- For a richer filling, mix caramel with a spoonful of peanut butter.
- Chill cupcakes for 10 minutes after filling to help set the caramel.
- Use high-quality cocoa powder for deeper chocolate flavor.
