- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup coconut oil or unsalted butter, melted
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup trail mix (combination of nuts, seeds, dried fruit, chocolate chips)
- 1/4 cup additional chocolate chips or dried fruit (optional)
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In another bowl, mix melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla until well combined.
- Stir wet ingredients into dry until just combined.
- Fold in trail mix and any additional chocolate chips or dried fruit.
- Use a cookie scoop or tablespoon to drop dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, until edges are set and centers are still soft.
- Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
