  • 6 boneless, skinless chicken thighs
  • 1 tbsp vegetable oil
  • 1 large onion, thinly sliced
  • 1/3 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
  • Salt and pepper to taste
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions

  1. Season chicken thighs lightly with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Add sliced onions and cook, stirring often, for 10–15 minutes until deeply caramelized. Remove and set aside.
  3. In the same skillet, add chicken thighs and sear for 3–4 minutes per side until browned.
  4. While chicken cooks, mix soy sauce, honey (or brown sugar), rice vinegar, garlic, and ginger in a bowl.
  5. Pour the sauce over the chicken in the skillet. Reduce heat to low and cover. Simmer for 10–12 minutes until chicken is cooked through.
  6. If using cornstarch, stir it into the sauce and simmer uncovered for 2–3 more minutes until thickened.
  7. Add the caramelized onions back into the skillet and stir to coat in the glaze.
  8. Serve hot over rice or noodles, garnished with green onions and sesame seeds if desired.

Notes

  • Use bone-in thighs for deeper flavor, but increase cooking time slightly.
  • Brown sugar gives a richer caramel flavor, while honey adds a floral sweetness.
  • This dish pairs beautifully with steamed rice, quinoa, or even mashed potatoes.
