Spiced Apple Loaf Cake

A warmly spiced apple loaf cake made with fresh apples, cinnamon, and nutmeg. Moist, flavorful, and perfect for fall or as a cozy anytime treat.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 1/2 cups peeled and finely chopped apples (about 2 medium apples)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in the dry ingredients alternately with the milk, beginning and ending with flour mixture.
  6. Fold in chopped apples and nuts, if using.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Notes

  • Use a mix of sweet and tart apples for depth of flavor.
  • Add a simple glaze or dust with powdered sugar for presentation.
  • Store wrapped at room temperature for up to 3 days or refrigerate for longer shelf life.
