- 1 lb boneless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 teaspoons Madras curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds (optional)
- 1 (14 oz) can diced tomatoes
- 1 cup coconut milk
- 2 dried red chilies
- Fresh curry leaves (optional)
- Salt to taste
- Fresh cilantro for garnish
- Heat oil in a large pan over medium heat. Add mustard seeds and fenugreek seeds; when they start to pop, add dried red chilies and curry leaves.
- Add chopped onion and sauté until golden brown.
- Stir in garlic and ginger; cook for 1-2 minutes until fragrant.
- Add curry powder, turmeric, cumin, and chili powder. Cook spices for 1 minute, stirring frequently.
- Add chicken pieces and cook until browned on all sides.
- Pour in diced tomatoes and cook for 5 minutes, stirring occasionally.
- Pour in coconut milk, stir well, cover, and simmer for 20-25 minutes until chicken is cooked and sauce thickens.
- Season with salt to taste.
- Garnish with fresh cilantro and serve hot with rice or naan.
Notes
- Adjust chili powder to control heat level.
- Fresh curry leaves add authentic flavor but can be omitted if unavailable.
- Serve with basmati rice or warm naan bread.
