  • 2 cups red cabbage, thinly sliced
  • 1 ripe mango, diced
  • 1/4 red onion or shallot, thinly sliced
  • 1 jalapeño or red chili, finely sliced (adjust to taste)
  • 2 tbsp fresh cilantro or parsley, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil or avocado oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 tsp honey or maple syrup
  • Optional: 1/2 cup shredded carrots

Instructions

  1. In a large bowl, combine both cabbages, mango, onion, chili, and herbs.
  2. In a small bowl, whisk together lime juice, oil, salt, pepper, and optional sweetener.
  3. Pour the dressing over the slaw and toss thoroughly to coat.
  4. Let sit for 10–15 minutes before serving to allow flavors to blend.
  5. Serve chilled or at room temperature.
