- 2 packs ramen noodles (discard seasoning packets)

- 2 boneless, skinless chicken thighs or breasts

- 1 tablespoon vegetable oil

- 1 tablespoon soy sauce

- 1 tablespoon chili garlic sauce (adjust to taste)

- 1 tablespoon sesame paste or tahini

- 1 tablespoon peanut butter (optional, for creaminess)

- 2 teaspoons sesame oil

- 2 cloves garlic, minced

- 1 teaspoon grated ginger

- 4 cups chicken broth

- 1 tablespoon rice vinegar

- 1 teaspoon sugar

- 1 soft-boiled egg, halved (optional)

- 1/2 cup shredded carrots

- 1/2 cup sliced green onions

- 1 tablespoon toasted sesame seeds (for garnish)

- Heat vegetable oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and cooked through, about 5–6 minutes per side. Slice and set aside.

- In a pot, sauté garlic and ginger in sesame oil until fragrant, about 1 minute.

- Add soy sauce, chili garlic sauce, sesame paste, peanut butter (if using), rice vinegar, sugar, and chicken broth. Whisk until combined and bring to a gentle simmer for 5–7 minutes.

- Meanwhile, cook ramen noodles according to package directions. Drain and set aside.

- Divide noodles between serving bowls. Pour the hot broth over the noodles.

- Top with sliced chicken, soft-boiled egg, carrots, green onions, and sesame seeds.

- Serve hot with additional chili sauce or sesame oil if desired.

		Notes

- Adjust chili garlic sauce for desired spice level.

- Use tahini or Chinese sesame paste for a rich, nutty broth.

- Customize toppings with spinach, corn, or mushrooms.
