Ingredients

Scale
  • 2 packs ramen noodles (discard seasoning packets)
  • 2 boneless, skinless chicken thighs or breasts
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chili garlic sauce (adjust to taste)
  • 1 tablespoon sesame paste or tahini
  • 1 tablespoon peanut butter (optional, for creaminess)
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 4 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 soft-boiled egg, halved (optional)
  • 1/2 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and cooked through, about 5–6 minutes per side. Slice and set aside.
  2. In a pot, sauté garlic and ginger in sesame oil until fragrant, about 1 minute.
  3. Add soy sauce, chili garlic sauce, sesame paste, peanut butter (if using), rice vinegar, sugar, and chicken broth. Whisk until combined and bring to a gentle simmer for 5–7 minutes.
  4. Meanwhile, cook ramen noodles according to package directions. Drain and set aside.
  5. Divide noodles between serving bowls. Pour the hot broth over the noodles.
  6. Top with sliced chicken, soft-boiled egg, carrots, green onions, and sesame seeds.
  7. Serve hot with additional chili sauce or sesame oil if desired.

Notes

  • Adjust chili garlic sauce for desired spice level.
  • Use tahini or Chinese sesame paste for a rich, nutty broth.
  • Customize toppings with spinach, corn, or mushrooms.
