Spicy Stir-Fried Sausages with Peppers is a bold and flavorful dish featuring sliced sausages sautéed with colorful bell peppers, onions, and a spicy garlic-chili sauce. Perfect as a quick main dish or hearty side, served with rice or noodles.

  • 1 lb (450g) sausage links (smoked or cooked), sliced diagonally
  • 1 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp chili garlic sauce or sambal oelek
  • 1 tsp oyster sauce (optional)
  • 1/2 tsp sugar
  • 1/4 tsp black pepper
  • Chopped scallions or cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced sausages and stir-fry for 3–4 minutes until browned. Remove and set aside.
  3. In the same pan, add a little more oil if needed and sauté garlic and onions for 1 minute until fragrant.
  4. Add the sliced bell peppers and stir-fry for 2–3 minutes until slightly tender but still crisp.
  5. Return the sausages to the pan and add soy sauce, chili garlic sauce, oyster sauce (if using), sugar, and black pepper.
  6. Toss everything together and cook for another 2–3 minutes until well combined and heated through.
  7. Garnish with chopped scallions or cilantro and serve hot.

Notes

  • Use your preferred type of sausage—smoked, chicken, beef, or plant-based all work well.
  • Adjust chili garlic sauce to taste for more or less heat.
  • Great served over steamed rice, noodles, or even tucked into sandwich rolls.
