- 1 lb (450g) sausage links (smoked or cooked), sliced diagonally
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp chili garlic sauce or sambal oelek
- 1 tsp oyster sauce (optional)
- 1/2 tsp sugar
- 1/4 tsp black pepper
- Chopped scallions or cilantro, for garnish
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced sausages and stir-fry for 3–4 minutes until browned. Remove and set aside.
- In the same pan, add a little more oil if needed and sauté garlic and onions for 1 minute until fragrant.
- Add the sliced bell peppers and stir-fry for 2–3 minutes until slightly tender but still crisp.
- Return the sausages to the pan and add soy sauce, chili garlic sauce, oyster sauce (if using), sugar, and black pepper.
- Toss everything together and cook for another 2–3 minutes until well combined and heated through.
- Garnish with chopped scallions or cilantro and serve hot.
Notes
- Use your preferred type of sausage—smoked, chicken, beef, or plant-based all work well.
- Adjust chili garlic sauce to taste for more or less heat.
- Great served over steamed rice, noodles, or even tucked into sandwich rolls.
