Spicy Sweet Corn Fritters are crispy, golden bites packed with sweet corn, jalapeños, and herbs, lightly fried to perfection and served with a creamy dipping sauce — a flavorful appetizer or snack with a spicy kick.

  • 1 1/2 cups fresh or frozen sweet corn (thawed if frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated cheddar cheese
  • 1 small jalapeño, finely chopped
  • 2 green onions, chopped
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/2 tsp baking powder
  • 1/4 tsp paprika or cayenne pepper
  • Salt and black pepper to taste
  • 1 egg
  • 1/4 cup milk
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, mix together corn, flour, cornmeal, cheese, jalapeño, green onions, herbs, baking powder, paprika, salt, and pepper.
  2. In a separate bowl, whisk together egg and milk. Add wet ingredients to the corn mixture and stir until combined. Batter should be thick but scoopable.
  3. Heat 2–3 tablespoons of vegetable oil in a skillet over medium heat.
  4. Scoop heaping tablespoons of batter into the skillet, flattening slightly. Cook 2–3 minutes per side until golden brown and crisp.
  5. Transfer to a paper towel-lined plate to drain excess oil. Repeat with remaining batter, adding oil as needed.
  6. Serve warm with sour cream, spicy mayo, or your favorite dipping sauce.

Notes

  • Adjust the heat by adding more or less jalapeño or using cayenne instead of paprika.
  • Make them mini for party bites or larger for a brunch side.
  • Fritters can be kept warm in a 200°F (95°C) oven while you cook the rest.
  • Leftovers reheat well in a skillet or air fryer for crispiness.
