  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup brewed strong coffee, cooled
  • 1/4 cup milk
  • For the caramel topping:
  • 1/2 cup granulated sugar
  • 2 tbsp water
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Cream together the butter and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, combine the cooled coffee and milk.
  6. Add the dry ingredients to the butter mixture in three additions, alternating with the coffee-milk mixture. Mix just until combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool slightly in the pan.
  9. To make the caramel: In a saucepan over medium heat, combine sugar and water. Stir gently until sugar dissolves, then stop stirring and cook until it turns amber.
  10. Carefully whisk in cream, butter, and a pinch of salt. Stir until smooth, then remove from heat and let cool slightly.
  11. Pour the warm caramel over the cake and spread evenly. Let it set before slicing.
