- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup brewed strong coffee, cooled
- 1/4 cup milk
- For the caramel topping:
- 1/2 cup granulated sugar
- 2 tbsp water
- 1/4 cup heavy cream
- 2 tbsp unsalted butter
- Pinch of salt
- Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Cream together the butter and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- In another bowl, combine the cooled coffee and milk.
- Add the dry ingredients to the butter mixture in three additions, alternating with the coffee-milk mixture. Mix just until combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool slightly in the pan.
- To make the caramel: In a saucepan over medium heat, combine sugar and water. Stir gently until sugar dissolves, then stop stirring and cook until it turns amber.
- Carefully whisk in cream, butter, and a pinch of salt. Stir until smooth, then remove from heat and let cool slightly.
- Pour the warm caramel over the cake and spread evenly. Let it set before slicing.
