Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup honey
  • 3 tbsp soy sauce or tamari
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil or sesame oil
  • 1 tbsp rice vinegar or apple cider vinegar
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 tsp red pepper flakes
  • Optional: 1 tsp cornstarch (for thickening)
  • Optional: Sliced green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. In a bowl, whisk together honey, soy sauce, garlic, ginger, oil, and vinegar.
  3. Pat chicken thighs dry with paper towels and season with salt and pepper.
  4. Place chicken on the wire rack and brush generously with the honey mixture.
  5. Bake for 35–40 minutes, basting once or twice with remaining sauce.
  6. Broil for 2–3 minutes at the end for extra caramelization if desired.
  7. Let rest briefly before serving. Garnish with sliced green onions if using.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F (74°C).
  • Marinate in the glaze for up to 12 hours for deeper flavor.
  • Reduce glaze on stovetop with cornstarch for a thicker sauce.
  • Boneless thighs can be used, reduce cook time by 5–7 minutes.
